Balsamic Onion Marmalade
This is a wonderful marmalade that works really well in sandwiches in addition to crostini or bruschetta, steak, and pizza. It’s addictively good.

Ingredients
- 1 tablespoon neutral oil (vegetable or canola)
- 4 medium onions, sliced
- salt
- black pepper, freshly ground
- pinch of ground clove and/or nutmeg (optional)
- ⅓ cup sugar
- ⅔ cup balsamic vinegar
Instructions
- In a large sauté pan, heat the oil over medium heat.
- Add the onions, salt and pepper and spices, if using, then cook until the onions are soft about 20 minutes, stirring occasionally.
- Reduce the heat to medium-low and add the sugar.
- Cook, stirring frequently, for another 10 minutes, until the onions appear dry. Add the vinegar.
- Reduce the heat to low and cook, stirring occasionally, until the onions are soft and dry, about 1 hour.
- Serve warm or at room temperature.
- The marmalade can be stored in the refrigerator and will keep for several weeks.
