Balsamic Onion Marmalade

This is a wonderful marmalade that works really well in sandwiches in addition to crostini or bruschetta, steak, and pizza.  It’s addictively good.

Ingredients

  • 1 tablespoon neutral oil (vegetable or canola)
  • 4 medium onions, sliced
  • salt
  • black pepper, freshly ground
  • pinch of ground clove and/or nutmeg (optional)
  • ⅓ cup sugar
  • ⅔ cup balsamic vinegar

Instructions

  1. In a large sauté pan, heat the oil over medium heat.
  2. Add the onions, salt and pepper and spices, if using, then cook until the onions are soft about 20 minutes, stirring occasionally.
  3. Reduce the heat to medium-low and add the sugar. 
  4. Cook, stirring frequently, for another 10 minutes, until the onions appear dry. Add the vinegar. 
  5. Reduce the heat to low and cook, stirring occasionally, until the onions are soft and dry, about 1 hour.
  6. Serve warm or at room temperature. 
  7. The marmalade can be stored in the refrigerator and will keep for several weeks.
