Apple Walnut Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 egg whites
  • 1 egg, lightly beaten
  • 2 cups fat-free milk
  • 2 tablespoon canola oil
  • 1 medium apple, peeled and chopped
  • ½ cup walnuts, chopped
  • Maple syrup

Instructions

  1. In a large bowl, combine the flours, brown sugar, baking powder, salt and cinnamon.
  2. In a medium bowl, combine the egg whites, egg, milk and oil.
  3. Add the wet ingredients into the dry ingredients and stir until just moistened. Fold in apple and walnuts.
  4. Pour ¼ cup of batter onto a hot griddle coated with cooking spray. Turn when bubbles form on top of the pancake. Cook until the second side is golden brown. Serve with syrup.

Yield:18 pancakes

Note

  • Delicious with turkey bacon, baked in 400°F oven for 15 minutes.
