Apple Walnut Pancakes

Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tablespoon brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 egg whites
- 1 egg, lightly beaten
- 2 cups fat-free milk
- 2 tablespoon canola oil
- 1 medium apple, peeled and chopped
- ½ cup walnuts, chopped
- Maple syrup
Instructions
- In a large bowl, combine the flours, brown sugar, baking powder, salt and cinnamon.
- In a medium bowl, combine the egg whites, egg, milk and oil.
- Add the wet ingredients into the dry ingredients and stir until just moistened. Fold in apple and walnuts.
- Pour ¼ cup of batter onto a hot griddle coated with cooking spray. Turn when bubbles form on top of the pancake. Cook until the second side is golden brown. Serve with syrup.
Yield:18 pancakes
Note
- Delicious with turkey bacon, baked in 400°F oven for 15 minutes.
