Johnny Cake (Cornbread)
Excellent! Sweet and holds together. I tried six different recipes. This was the one I kept for cornbread. – Jeanne
Ingredients
- ½ cup corn meal
- 1 cup all-purpose flour
- ¼ cup sugar
- 3 teaspoons baking powder
- 1/2 tsp salt
- 2 tablespoons oil
- 1 egg, beaten
- 1 cup milk
Instructions
- Preheat oven to 450 degrees.
- In a medium bowl, stir together corn meal, flour, sugar, baking powder, and salt.
- In a small bowl mix together the oil, beaten egg and milk.
- Make a well in the dry ingredients and add the wet mixture. Mix gently until all the dry ingredients are incorporated.
- Pour into a greased 8-inch square or, for crisper bread, a 9-inch square pan.
- Bake for 15-20 minutes or until the top is golden brown.
