Tortilla Soup
A quick and delicious family favorite.

Ingredients
- 2 (14 1/2 oz) cans chicken broth
- 1 (14 1/2 oz) can stewed tomatoes
- 1 tablespoon fresh lemon juice
- 3 garlic cloves, pressed or finely minced
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 1/2 cups cooked chicken, chopped
- 1 cup frozen corn kernels
- 1 (15 oz.) can black beans, drained and rinsed
- 2 tablespoons half-and-half
- 1 green onion, thinly sliced
- 1 cup (4 oz.) shredded Mexican four-cheese blend
- tortilla chips
Instructions
- In a large stock pot, bring first 7 ingredients to a boil.
- Reduce heat, add chicken and next 4 ingredients, and simmer 20 minutes.
- Ladle into your favorite bowl and garnish with cheese and green onions. Serve with tortilla chips.
