Sheri’s Corn Relish Salad

Ingredients
- 2 15 oz. can Le Sear peas
- 2 14½ oz. can French style green beans
- 2 11 oz. can shoe peg corn
- 1 large jar pimento
- 1 cup celery, chopped
- 1 cup red onion, chopped
- 1 green pepper, chopped
- ½ cup oil
- ¾ cup vinegar
- 1 cup sugar
- 1 tablespoon water
- 1 teaspoon pepper
- 1 teaspoon salt
Instructions
- Drain the cans of peas, green beans, corn and pimento.
- Chop the pimento.
- In a large bowl add celery, red onion, and green pepper.
- To this mixture add the peas, green beans, corn and pimento and stir to combine.
- In a small bowl, mix together the oil and next 5 ingredients. Pour over vegetables and mix together.
- Marinate 24 hours. Drain and serve.
