Sheri’s Corn Relish Salad

Recipe from Sheri Dressel.

Ingredients

  • 2 15 oz. can Le Sear peas
  • 2 14½ oz. can French style green beans
  • 2 11 oz. can shoe peg corn
  • 1 large jar pimento
  • 1 cup celery, chopped
  • 1 cup red onion, chopped
  • 1 green pepper, chopped
  • ½ cup oil
  • ¾ cup vinegar
  • 1 cup sugar
  • 1 tablespoon water
  • 1 teaspoon pepper
  • 1 teaspoon salt

Instructions

  1. Drain the cans of peas, green beans, corn and pimento.
  2. Chop the pimento.
  3. In a large bowl add celery, red onion, and green pepper.
  4. To this mixture add the peas, green beans, corn and pimento and stir to combine.
  5. In a small bowl, mix together the oil and next 5 ingredients. Pour over vegetables and mix together.
  6. Marinate 24 hours. Drain and serve.
