Southwest Baked Beans

The spiciness factor can be kicked up (or down) by adjusting the chili powder and adding hot sauce. – Terry

Ingredients

  • 1 tablespoon vegetable oil
  • 5 oz Canadian bacon, cut into ½-inch pieces
  • 2 cups onion, chopped
  • 15-oz can tomato sauce
  • 1 cup packed light brown sugar
  • 6 tablespoons apple cider vinegar
  • 3 tablespoons light molasses
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chili power (or to taste)
  • 1 15-oz can garbanzo beans (chickpeas), drained and rinsed
  • 1 15-oz can kidney beans, drained and rinsed
  • 1 15-oz can black beans, drained and rinsed
  • 1 15-oz can butter beans, drained and rinsed

Instructions

  1. Preheat oven to 375°F.
  2. Heat oil in heavy large ovenproof pot over medium-high heat. Add bacon and onions; sauté until brown, about 10 minutes.
  3. Mix in tomato sauce and next 5 ingredients.
  4. Add all of the beans and stir to combine.
  5. Cover pot and transfer to the oven to bake until mixture thickens, stirring occasionally, about an hour and a half.
