Southwest Baked Beans
The spiciness factor can be kicked up (or down) by adjusting the chili powder and adding hot sauce. – Terry

Ingredients
- 1 tablespoon vegetable oil
- 5 oz Canadian bacon, cut into ½-inch pieces
- 2 cups onion, chopped
- 15-oz can tomato sauce
- 1 cup packed light brown sugar
- 6 tablespoons apple cider vinegar
- 3 tablespoons light molasses
- 1 tablespoon Worcestershire sauce
- 1 tablespoon chili power (or to taste)
- 1 15-oz can garbanzo beans (chickpeas), drained and rinsed
- 1 15-oz can kidney beans, drained and rinsed
- 1 15-oz can black beans, drained and rinsed
- 1 15-oz can butter beans, drained and rinsed
Instructions
- Preheat oven to 375°F.
- Heat oil in heavy large ovenproof pot over medium-high heat. Add bacon and onions; sauté until brown, about 10 minutes.
- Mix in tomato sauce and next 5 ingredients.
- Add all of the beans and stir to combine.
- Cover pot and transfer to the oven to bake until mixture thickens, stirring occasionally, about an hour and a half.
