Chicken Parmesan Meatballs

Ingredients
- 1¼ lbs ground chicken
- 2 tablespoons chopped onion
- ½ cup Parmesan
- 1 teaspoon fennel seeds
- ½ cup breadcrumbs
- 1 tablespoon chopped parsley
- 1 clove garlic, minced
- zest of a half lemon
- 1 egg, whisked
- ½ teaspoon salt
- a few grinds of pepper
- 14-oz can pizza sauce (Don Pepino’s or your favorite)
- olive oil
- 4 oz fresh mozzarella, sliced very thinly (~12 pieces)
Instructions
- Preheat oven to 400°F, setting rack in upper third part of oven.
- In a large bowl, gently mix together first 11 ingredients with your hands. Shape into lacrosse-ball size balls (somewhere between golf and tennis ball size) and place a few inches from each other on a foil-lined baking sheet.
- In a small bowl, mix a spoonful of pizza sauce with a little olive oil. Brush this mixture on top of each meatball. Bake for 15 minutes.
- Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese.
- Broil another 3 to 5 minutes until cheese is bubbly and golden.
- Heat remaining sauce in a small saucepan. Serve each meatball with a dollop of sauce. Can serve the meatballs on their own, over noodles or like we did, with spaghetti.
