Braised Pork with Carrots
Excellent recipe!! This is another recipe that Mum and I got when we took the Chinese Cooking course together. It is very easy to make and is delicious.

Ingredients
- 1 clove garlic, minced
- 1 Tbs pale dry sherry
- ⅓ cup soy sauce
- 1 lb pork tenderloin, cut into strips
- 1 Tbs cornstarch
- 2 Tbs neutral oil (vegetable or canola)
- 2 onions, each cut into 6 sections
- 1 Tbs sugar
- 4 carrots, cut into 3” julienned strips
- chopped parsley to garnish
Instructions
- Mix together the garlic, sherry, and 2 tablespoons of the soy sauce. Add the pork strips and toss to coat well. Leave to marinate for at least 20 minutes, then stir in the cornstarch.
- Heat the oil in the nonstick pan or wok over medium high heat. Throw in the onions and stir-fry for about 45 seconds, then add the meat mixture and stir-fry until the meat is browned.
- Add the remaining soy sauce, the sugar, and just enough water to cover the meat. Bring to a boil. Add the carrots. cover the pan and simmer for about 40 minutes or until the meat is tender.
- Garnish with chopped parsley and serve hot over rice or quinoa.
