Chicken with Sesame Noodles
I got this recipe from Terry after she served it for dinner during a visit. I nearly inhaled the entire bowl of noodles and begged for the recipe (although I didn’t have to beg very hard). – Kathy
Ingredients
- 8 oz linguine or spaghetti
- 2 large boneless, skinless chicken breast halves (1lb), sliced into 1″ strips
- 2 tablespoons cornstarch
- ½ teaspoon salt
- 2 tablespoons vegetable oil
- ¼ cup creamy or chunky peanut butter
- 3 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon white vinegar
- 2 teaspoon sugar
- ¾ cup water
- 1 medium red pepper, finely julienned
- 1 medium cucumber, finely julienned
- 1 green onion, sliced
Instructions
- About 40 minutes before serving prepare linguine per label instructions and drain.
- In a medium bowl, combine cornstarch and salt. Add chicken strips and stir to coat.
- In a 12” pan over medium-high heat cook chicken in vegetable oil. Remove chicken to plate and keep warm.
- In the same pan the chicken was cooked, over low heat, add peanut butter, soy sauce, sesame oil, vinegar, sugar and water. Stir and cook until smooth. Stir in linguine and heat.
- Put linguine on platter. Top with chicken, pepper, cucumbers and onions and toss to serve.
Serves 4
Note
- If you want the leftovers to taste better, do not put pepper, cucumbers and onions on the top – serve them on the side so that they won’t wilt.
