Molasses Oatmeal Cookies
Whenever I bake, I bring the cookies into work to share with my friends. It’s a great test of what works and what doesn’t. These definitely worked! – Kathy
Ingredients
- 1 stick butter, room temperature
- ½ cup firmly packed brown sugar
- ¼ cup sugar
- 1 egg
- ½ teaspoon vanilla extract
- 2 tablespoons molasses
- ¾ cup plus 2 tablespoons flour
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- 1½ cups old-fashioned (rolled) oats
- ½ cup raisins
Instructions
Preheat oven to 350° F.
In a large mixing bowl using an electric mixer on medium speed, beat the butter and sugars until creamy, about 1 minute. Add the egg, vanilla and molasses and beat until completely incorporated, at least 1 minute.
In a small bowl, combine the flour, baking soda, cinnamon, and ginger. Add to the butter mixture and blend well in the mixer. Add the oats and raisins. Stir to combine.
Use a spoon to form about 2 tablespoons of dough into a ball. Place the balls of dough at least 2 inches apart on the baking sheet. Bake for 11 to 13 minutes, until light golden brown. Cool for 1 minute before transferring to a wire rack to cool.
Makes 14 large cookies
