Ginger Cookies

This recipe was given to me by Ma McCabe, a housemother at Alpha Gamma Rho fraternity at the University of Maine, during my Junior year in college.  Every guy I ever knew, especially mine, loved these cookies!  Still do. – Jeanne

Ingredients

  • 2 cups flour
  • 2 teaspoons soda
  • 2 teaspoons ginger
  • ½ teaspoons salt
  • ¾ cup shortening
  • 1 teaspoon vanilla
  • 1 cup sugar
  • ¼ cup molasses
  • 1 egg
  • Extra granulated sugar

Instructions

  1. Mix ingredients together. 
  2. Preheat oven to 350° F.
  3. Roll into balls (size of walnuts). 
  4. Shake in bag of sugar.
  5. Place balls onto an ungreased cookie sheet 2-inches apart.
  6. Bake for 12 to 15 minutes. Cookies are very round and crinkly-topped.
