Pumpkin Bars
I had some leftover canned pumpkin to use up and ran across this recipe. We ate the whole pan in just a couple of days. I have made this numerous times since and it continues to be a family favorite. – Elizabeth
Ingredients
- 4 eggs
- 2 cups sugar
- 2 cups canned pumpkin
- ¾ cup butter or margarine, melted
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ¾ teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon ground cloves
- 1 cup chopped walnuts, optional
- 1 tub (16oz) cream cheese frosting (your favorite brand)
Instructions
- Preheat oven to 325° F.
- In a large bowl, cream the eggs and sugar.
- Add the rest of the ingredients in the order given up to the walnuts. Beat until well mixed.
- Fold in the walnuts, if using.
- Pour into a greased 11”x17” jelly roll pan.
- Bake 25 minutes or until a toothpick inserted in the middle comes out clean.
- Let cool completely and frost.
