Pumpkin Bars

I had some leftover canned pumpkin to use up and ran across this recipe. We ate the whole pan in just a couple of days. I have made this numerous times since and it continues to be a family favorite. – Elizabeth

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 2 cups canned pumpkin
  • ¾ cup butter or margarine, melted
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground cloves
  • 1 cup chopped walnuts, optional
  • 1 tub (16oz) cream cheese frosting (your favorite brand)

Instructions

  1. Preheat oven to 325° F. 
  2. In a large bowl, cream the eggs and sugar. 
  3. Add the rest of the ingredients in the order given up to the walnuts. Beat until well mixed. 
  4. Fold in the walnuts, if using.
  5. Pour into a greased 11”x17” jelly roll pan. 
  6. Bake 25 minutes or until a toothpick inserted in the middle comes out clean.
  7. Let cool completely and frost.
