Soft Molasses Cookies
A recipe found by Grammy Marge (Gram Cook) long ago. Our family liked it so much, we never bothered with another soft molasses cookie recipe! – Jeanne
Ingredients
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup sugar
- 1 cup molasses
- 1 egg
- 5 cups all-purpose flour
- 2 teaspoons ginger
- ¼ teaspoon clove
- ¼ teaspoon nutmeg
- 2 teaspoons cinnamon
- ¼ teaspoon salt
- 4 teaspoons baking soda
- ¾ cup coffee
Instructions
- Mix together butter, sugar and molasses. Add in egg.
- Sift together flour, ginger, clove, nutmeg, cinnamon, salt and baking soda.
- To the butter mixture, alternate mixing in coffee and dry ingredients. Mix well.
- Make day before and chill overnight.
- Preheat oven to 375° F.
- Roll out dough to 1/4-inch thick. Using a large cookie cutter, cut out cookies and place onto a parchment lined cookie sheet.
- Bake at 375° for about 14 minutes. Allow to set a few minutes before removing from sheet and finish cooling on a wire rack. Makes about 70 cookies.
Note
- This dough is much easier to handle if it is really kept chilled. I usually take out just enough dough to roll out at one time and put the leftovers back in the fridge to chill until I am ready to use it again. Otherwise, the dough is too sticky to handle.
