Old-Fashioned Cranberry Sauce

From November 2011 Cooking Light, a delicious alternative to canned cranberry sauce. Love the orange flavor.

Ingredients

  • 1 tablespoon canola oil
  • ½ cup onion, chopped
  • 1¼ cups sugar
  • ½ cup water
  • ¼ cup port wine
  • ¼ teaspoon ground ginger
  • 1 12-oz. package fresh cranberries
  • 2 teaspoons grated orange rind

Instructions

  1. In a medium saucepan, heat oil over medium-high heat. Add onion, and sauté for 4 minutes.
  2. Add sugar and the next 4 ingredients (through cranberries); bring to a boil. Reduce heat, and simmer for 8 minutes or until cranberries pop.
  3. Remove from heat and stir in orange rind.
  4. Serve chilled or at room temperature.
