Apple Harvest Cake
This recipe was a winner in the Pillsbury Bake-off Contest. Very yummy and moist! An Orono quilter, Leslie Astbury, brought it to the quilter’s retreat held at Hancock in November 2008. – Jeanne
Ingredients
- 1¼ cups white flour
- 1 cup whole wheat flour
- 1 cup sugar
- ¾ cup packed brown sugar
- 1 tablespoon cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- ½ teaspoon soda
- ¾ cup cooking oil
- 1 tsp vanilla
- 3 eggs
- 2 cups finely chopped apples
- 1 cup chopped nuts
Glaze:
- ½ cup powdered sugar
- ¼ teaspoon vanilla
- 2 to 3 teaspoons milk
Instructions
Beat all ingredients except apples and nuts together for 3 minutes at medium speed after blending together.
Stir in by hand the apples and chopped nuts.
Pour into greased and floured tube or Bundt pan. Bake at 325°F for 50 to 60 minutes. Cool 15 minutes in pan. Turn out. Cool.
