Banana Chocolate Chip Muffins

One of Kelly’s favorites – and a good way to use up ripe bananas.

Ingredients

  • 1½ cups all-purpose flour
  • ⅔ cup sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup ripe bananas, mashed (about 2 large)
  • 1 large egg
  • ½ cup (1 stick) unsalted butter, melted or ¼ c. butter, ¼ c. oil
  • ¼ cup milk
  • ¾ cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350° F.  Line twelve ⅓-cup muffin cups with foil muffin liners. 
  2. In a large bowl, mix flour, sugar, baking powder and salt in large bowl. 
  3. In a medium bowl, mix together mashed bananas, egg, melted butter and milk. 
  4. Stir banana mixture into the dry ingredients and stir just until combined (do not overmix).  Stir in chocolate chips.
  5. Divide batter among prepared muffin cups, filling each about ¾ full. 
  6. Bake for 30-35 minutes or until tops are pale golden and a toothpick or tester inserted in the center comes out with some melted chocolate attached but no crumbs.  Transfer muffins to rack and cool.
