Banana Chocolate Chip Muffins
One of Kelly’s favorites – and a good way to use up ripe bananas.
Ingredients
- 1½ cups all-purpose flour
- ⅔ cup sugar
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- 1 cup ripe bananas, mashed (about 2 large)
- 1 large egg
- ½ cup (1 stick) unsalted butter, melted or ¼ c. butter, ¼ c. oil
- ¼ cup milk
- ¾ cup semisweet chocolate chips
Instructions
- Preheat oven to 350° F. Line twelve ⅓-cup muffin cups with foil muffin liners.
- In a large bowl, mix flour, sugar, baking powder and salt in large bowl.
- In a medium bowl, mix together mashed bananas, egg, melted butter and milk.
- Stir banana mixture into the dry ingredients and stir just until combined (do not overmix). Stir in chocolate chips.
- Divide batter among prepared muffin cups, filling each about ¾ full.
- Bake for 30-35 minutes or until tops are pale golden and a toothpick or tester inserted in the center comes out with some melted chocolate attached but no crumbs. Transfer muffins to rack and cool.
