Bow Tie Pasta with Veggies
My kids loved this dinner even though it’s packed with vegetables. . This is also a quick and easy weeknight meal for us busy Moms. – Elizabeth
Ingredients
- 1 pound bow tie pasta
- 2 tablespoons olive oil
- 2-3 cups vegetables, cut into ½” pieces (carrots, zucchini, yellow squash, onion, red and green peppers)
- ⅓ cup ground almonds
- ⅓ cup milk
- 3 garlic cloves, crushed
- ½ teaspoon salt
- Black pepper
- Parmesan cheese
Instructions
- While pasta is cooking, prepare the sauce.
- Heat 1 tablespoon olive oil in a frying pan over medium heat. Sauté the onion and carrot for 2-3 minutes, then add the rest of the veggies and sauté for another 3-4 minutes.
- Remove the veggies, add the remaining olive oil and the ground almonds, stirring until lightly browned. Return the veggies to the pan and add the milk, garlic and salt. Cook for 1-2 minutes.
- Drain the pasta, toss in the pan and stir to coat. Serve with pepper and Parmesan. Serves 4-6.
Note
- Can add cooked chicken when the veggies are added back in.
