Chicken Parmesan Meatballs

Ingredients

  • 1¼ lbs ground chicken
  • 2 tablespoons chopped onion
  • ½ cup Parmesan
  • 1 teaspoon fennel seeds
  • ½ cup breadcrumbs
  • 1 tablespoon chopped parsley
  • 1 clove garlic, minced
  • zest of a half lemon
  • 1 egg, whisked
  • ½ teaspoon salt
  • a few grinds of pepper
  • 14-oz can pizza sauce (Don Pepino’s or your favorite)
  • olive oil
  • 4 oz fresh mozzarella, sliced very thinly (~12 pieces)

Instructions

  1. Preheat oven to 400°F, setting rack in upper third part of oven.
  2. In a large bowl, gently mix together first 11 ingredients with your hands. Shape into lacrosse-ball size balls (somewhere between golf and tennis ball size) and place a few inches from each other on a foil-lined baking sheet.
  3. In a small bowl, mix a spoonful of pizza sauce with a little olive oil. Brush this mixture on top of each meatball. Bake for 15 minutes.
  4. Remove meatballs from oven, spoon some sauce on top of each meatball, and cover each with a slice of cheese.
  5. Broil another 3 to 5 minutes until cheese is bubbly and golden.
  6. Heat remaining sauce in a small saucepan. Serve each meatball with a dollop of sauce. Can serve the meatballs on their own, over noodles or like we did, with spaghetti.

Makes 12 large meatballs
