Chicken Salad with Grapes and Walnuts

Ingredients

  • 4 cups (about 1¾ lb) cooked chicken, cut into ½” cubes
  • 1 cup walnuts, toasted and chopped
  • 1 celery rib, cut into ¼ inch thick slices (1 cup)
  • 2 tablespoons shallot, finely chopped
  • 2 cups seedless red grapes, halved
  • ¾ cup mayonnaise
  • 3 tablespoons tarragon vinegar (or red wine vinegar)
  • 2 tablespoons fresh tarragon, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. In a large bowl mix together all ingredients until combined well.  Makes 4-6 servings.
