Chicken Salad with Grapes and Walnuts
Ingredients
- 4 cups (about 1¾ lb) cooked chicken, cut into ½” cubes
- 1 cup walnuts, toasted and chopped
- 1 celery rib, cut into ¼ inch thick slices (1 cup)
- 2 tablespoons shallot, finely chopped
- 2 cups seedless red grapes, halved
- ¾ cup mayonnaise
- 3 tablespoons tarragon vinegar (or red wine vinegar)
- 2 tablespoons fresh tarragon, finely chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a large bowl mix together all ingredients until combined well. Makes 4-6 servings.
