Company Muffins

I used to make these muffins all the time when the kids were little, since they contain lots of nutritious ingredients. And they are delicious. -Terry

Ingredients

  • 1 cup all-purpose flour
  • 1 cup oat bran
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoon cinnamon
  • 1 cup brown sugar
  • 1½ cups finely shredded carrots
  • 2 large, tart apples, peeled, cored and shredded
  • ½ cup raisins (optional)
  • 1 cup chopped pecans
  • ¼ cup vegetable oil
  • ½ cup skim milk
  • 2 eggs, slightly beaten (or egg substitute)
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl, combine flour, oat bran, baking soda, baking powder, salt and cinnamon. Stir in sugar. Add carrots, apples, raisins and nuts. Stir well.
  3. Make a well in the center. Add oil, milk, eggs and vanilla. Stir just until moistened.
  4. Use a ¼-cup measure to scoop muffin batter into greased tins.
  5. Bake for 18 to 20 minutes or until nicely browned.

Makes 18 muffins. These muffins freeze beautifully.
