Crostini with Onion Jam

I recently took a cooking class and this was one of the recipes that we prepared.  Unbelievably good!

Ingredients

  • 4 large onions, sliced or chopped
  • 2 Tbs olive oil
  • salt
  • black pepper
  • 1 Tbs sugar
  • 3-4 sprigs fresh thyme or ½ tsp dried
  • 1/2 cup red or white wine or 1/2 cup white or red vinegar
  • 1 Baguette

Instructions

  1. Heat a medium-sized sauté pan on medium and add in the olive oil. 
  2. To the pan with oil, add the onions and cook until they begin to wilt.  Season with salt and pepper and cook another 10 minutes. 
  3. Sprinkle the sugar over the onions and continue cooking until they begin to brown. 
  4. Add wine or vinegar and thyme, cover the pan and cook for 30 minutes on very low heat.
  5. Remove the cover and continue cooking on low heat until the liquid has almost disappeared. Taste and season with salt and pepper.  If the onions are too tart add more sugar or if too sweet add vinegar, if needed.
  6. Preheat oven to 400°.  Slice a baguette on the diagonal into ⅛ inch slices.  Place in a single layer on a baking sheet.  Bake for 10 minutes.
  7. To serve, add 1 Tbs of onions on top of each crostini.
