Falafel

Ingredients

  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1 small onion, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 clove garlic, minced
  • 2 teaspoons ground cumin
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • Olive oil for frying

Instructions

  1. In a food processor, pulse chickpeas to desired texture (less time for chunkier pieces of chickpeas).
  2. Transfer chickpeas to a large bowl and add all other ingredients. Combine into a rough paste.
  3. Shape mixture into tablespoon-sized disks, about 1-inch in diameter.
  4. Add about 1 inch of oil into a skillet. Heat to 360°F.
  5. Fry over medium-high heat for 3-4 minutes per side.
  6. Remove falafel from oil and drain on paper towels.
