Hummus

Homemade hummus is so much better than store bought. And it’s super easy, too. The tomato, green onions and parsley are a tasty and colorful addition, but not necessary. Recipe is from The Appetizer Bible by way of Mum. – Terry

Ingredients

  • 15 oz. can chickpeas, rinsed and drained
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • 3/4 teaspoon salt
  • 1-2 tablespoons water
  • 1 tomato, finely chopped
  • 2 green onions, finely chopped
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Combine chickpeas, tahini, lemon juice, garlic and salt in a food processor and blend until smooth. You may have to add 1-2 tablespoons of water to make it smooth.
  2. Combine tomatoes, green onions and parsley in a small bowl.
  3. Place chickpea mixture in a medium bowl or spread out evenly on a plate and top with tomato mixture.
  4. Serve with pita chips, crackers or veggies.
