Hummus
Homemade hummus is so much better than store bought. And it’s super easy, too. The tomato, green onions and parsley are a tasty and colorful addition, but not necessary. Recipe is from The Appetizer Bible by way of Mum. – Terry
Ingredients
- 15 oz. can chickpeas, rinsed and drained
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1 clove garlic
- 3/4 teaspoon salt
- 1-2 tablespoons water
- 1 tomato, finely chopped
- 2 green onions, finely chopped
- 2 tablespoons fresh parsley, chopped
Instructions
- Combine chickpeas, tahini, lemon juice, garlic and salt in a food processor and blend until smooth. You may have to add 1-2 tablespoons of water to make it smooth.
- Combine tomatoes, green onions and parsley in a small bowl.
- Place chickpea mixture in a medium bowl or spread out evenly on a plate and top with tomato mixture.
- Serve with pita chips, crackers or veggies.
