Johnny Cake (Cornbread)

Excellent!  Sweet and holds together.  I tried six different recipes.  This was the one I kept for cornbread. – Jeanne

Ingredients

  • ½ cup corn meal
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 3 teaspoons baking powder
  • 1/2 tsp salt
  • 2 tablespoons oil
  • 1 egg, beaten
  • 1 cup milk

Instructions

  1. Preheat oven to 450 degrees.
  2. In a medium bowl, stir together corn meal, flour, sugar, baking powder, and salt. 
  3. In a small bowl mix together the oil, beaten egg and milk.
  4. Make a well in the dry ingredients and add the wet mixture. Mix gently until all the dry ingredients are incorporated.
  5. Pour into a greased 8-inch square or, for crisper bread, a 9-inch square pan.
  6. Bake for 15-20 minutes or until the top is golden brown.
