Lemon Squares

Made these squares for an area quilt meeting in Bangor this fall, October 2009.  Several people requested the recipe. – Jeanne 

Ingredients

  • 2 sticks butter, softened
  • 2 cups flour
  • ½ cup confectioners sugar
  • 4 eggs, beaten slightly
  • 2 cups sugar
  • 6 tablespoons lemon juice
  • 1 tablespoon flour
  • ½ teaspoon baking powder
  • 1 cup pecans

Instructions

Preheat oven to 325° F.  Mix the first three ingredients and press the mixture onto the bottom of a 10×14-inch pan.  Bake for 15 minutes.

Mix the remaining ingredients together and pour this on top of the pastry.  Put this in the oven for 40-50 minutes. 

When done, remove from oven and sprinkle with additional powdered sugar. 

Makes 2-3 dozen depending on size.
