Oatmeal Carmelitas

This is a recipe that I got when I was a Girl Scout in 5th or 6th grade from a girl in my troop whom I couldn’t stand.  I loved the treats she brought in and I desperately wanted the recipe. I hated to ask her for it but am so glad I did since it’s still a favorite of mine. – Kathy

Ingredients

Crumb Mixture

  • 1 cup flour
  • 1 cup rolled oats
  • ¾ cup brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup butter, melted

Topping

  • 1 cup chocolate chips
  • ¾ cup caramel ice cream topping
  • 3 tablespoon flour
  • ½ cup chopped nuts

Instructions

  1. Preheat the oven to 350° F.
  2. In a medium bowl, combine crumb mixture ingredients. 
  3. Put half of crumb mixture in a 9-inch square pan.  Save the rest for the top. 
  4. Bake the crust for 10 minutes. 
  5. In a small bowl, combine the topping mixture and then pour over baked crust. 
  6. Sprinkle remaining crumbs over caramel topping. 
  7. Bake again for 15 to 20 minutes or until golden brown.  Chill bars for easy cutting.
