Oatmeal Chippers

Gramp’s favorite cookie made with white bits.

Ingredients

  • 1 cup butter or margarine, softened
  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 cups quick-cooking or old-fashioned oats
  • 1 cup (6-ounce pkg.) semi-sweet chocolate chips, or white bits (white chocolate chips)
  • 1 cup chopped nuts (walnut or pecan), if desired

Instructions

  1. In a large mixing bowl beat butter or margarine and sugars until light and creamy.  Add eggs and vanilla.  Beat well.
  2. Preheat oven to 350° F
  3. Sift together flour, soda, salt, cinnamon and nutmeg.  Add to creamed mixture, mixing thoroughly. 
  4. Stir in rolled oats, chocolate chips and nuts.
  5. Drop by rounded teaspoonfuls, spacing 2-inches apart, onto lightly greased cookie sheet. 
  6. Bake for about 12 minutes or till lightly browned. 
  7. Remove from pan to cool on wire rack.  Makes 6 dozen.
