Pineapple Cookies
This recipe came from Gramp’s mother, Grace Soule. She packed these in his lunch when he commuted to the University of Maine in the fall and spring of 1956-7. He lived at home right after he got out of the Seebees. I often shared his lunch so we could spend more time together between classes. I loved these cookies! – Jeanne
Ingredients
- 1⅔ cups sugar
- ⅔ cup butter or shortening
- 2 eggs
- 2 teaspoons lemon extract
- ½ cup crushed pineapple (juice + pulp) [a little more pineapple makes a softer cookie]
- 2⅔ cups flour
- ½ teaspoon baking soda
- ½ teaspoon salt
