Pizza Dough
My go-to pizza dough recipe from Cooks Illustrated. Makes 4 medium sized pizzas or 2-3 larger ones. Since this recipe contains no oil, it’s important to spray pizza pans with cooking spray before baking, otherwise it’s practically impossible to remove pizza from the pan. – Terry
Ingredients
- 1¼ teaspoon instant yeast
- 1 cup water
- 1¾ cups unbleached all-purpose flour
- 1 cup cake flour
- 1½ teaspoon table salt
- 2 teaspoon sugar
Instructions
- Dissolve yeast in warm water for about 5 minutes.
- Add flour, salt and sugar and mix until dough is smooth, adding more flour if necessary. Turn out onto counter and kneed for about 5-10 minutes until dough is smooth and elastic.
- Let rise for an hour or two, punch down, and form into pizza shapes.
- If using metal pizza pans, spray with cooking spray before forming dough in pans.
