Salsa Chicken Breast

This is a good busy day meal, easy and fast!  I have used it as company fare, too. – Jeanne

INGREDIENTS

  • 2-3 boneless, skinless chicken breasts, cut into 1″ cubes (~1lb chicken)
  • 1 jar (16 oz.) thick and chunky salsa
  • 1 green pepper, remove seeds, membrane and chopped into 1/2″ cubes
  • 3 tablespoons neutral oil (vegetable or canola), divided

INSTRUCTIONS

  1. Heat 2 tablespoons oil in a 10″ or 12″ non-stick pan. Add chicken and sauté until no longer pink.  Remove from pan and keep warm. 
  2. Wipe out pan, add remaining oil, and allow to heat for 2 minutes.
  3. Add green peppers and cook until crisp tender. 
  4. Add salsa (may not need entire jar) and allow to heat through.
  5. Add the chicken and any accumulated juices back to the pan and allow to heat through. 
  6. Serve over rice.
