Scotch Cookies

Cookies are still family favorite after 40 years!

Ingredients

  • 1 cup + 2 tablespoons granulated sugar
  • 1 cup + 1 teaspoon shortening
  • ½ cup molasses
  • 1 egg
  • 2¾ cups flour
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • 1 teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon cloves

Instructions

  1. Preheat oven to 375° F.
  2. In a medium bowl, combine flour, baking soda, salt, nutmeg, ginger and cloves. Set aside.
  3. In a large bowl, cream sugar and shortening. 
  4. Add molasses and egg to butter mixture and mix until well combined.
  5. Add in flour mixture and mix well.
  6. Roll dough into balls size of a walnut. 
  7. Place remaining 2 tablespoons of sugar into a small shallow bowl or plate.
  8. Take clean glass, rub the bottom with 1 teaspoon shortening, dip in sugar then lightly press on ball of dough. When bottom of glass runs out of sugar, dip it again.
  9. Bake for 12 minutes. Let cool on cookie sheet for 2 minutes, then remove to a wire rack to finish cooling.
