Smothered Lentils
This would be an excellent meatless meal. Just omit the meat and use either vegetable stock or water. A little umph in the spices, maybe some thyme would be good too. I served with fresh rolls and salad. Wyatt even said “Mom, this is really good.” High praise from someone who typically doesn’t like healthy meals. – Elizabeth
Ingredients
- 2 cups dry lentils, sorted and rinsed
- 1 medium onion, chopped
- ½ cup celery, chopped
- 2 garlic cloves, minced
- 1 cup ham, chopped (you can use kielbasa, or another cooked sausage or no meat at all)
- ½ cup carrots, chopped
- 1 can (15oz) diced tomatoes
- 1 teaspoon dried marjoram
- 1 teaspoon ground coriander
- salt and pepper to taste
- 3 cups water, vegetable, chicken or beef stock (I used beef stock)
Instructions
- Combine all ingredients in slow cooker.
- Cover and cook on low 8 hours. (Check lentils after 5 hours of cooking. If they’ve absorbed all the water, stir in 1 more cup of water or stock.)
