Smothered Lentils

This would be an excellent meatless meal.  Just omit the meat and use either vegetable stock or water.   A little umph in the spices, maybe some thyme would be good too.  I served with fresh rolls and salad.  Wyatt even said “Mom, this is really good.”  High praise from someone who typically doesn’t like healthy meals. – Elizabeth

Ingredients

  • 2 cups dry lentils, sorted and rinsed
  • 1 medium onion, chopped
  • ½ cup celery, chopped
  • 2 garlic cloves, minced
  • 1 cup ham, chopped (you can use kielbasa, or another cooked sausage or no meat at all)
  • ½ cup carrots, chopped
  • 1 can (15oz) diced tomatoes
  • 1 teaspoon dried marjoram
  • 1 teaspoon ground coriander
  • salt and pepper to taste
  • 3 cups water, vegetable, chicken or beef stock (I used beef stock)

Instructions

  1. Combine all ingredients in slow cooker.
  2. Cover and cook on low 8 hours.  (Check lentils after 5 hours of cooking.  If they’ve absorbed all the water, stir in 1 more cup of water or stock.)
