Sour Cream Raisin Pie

Ingredients

  • 1 cup sugar + 6 Tbs sugar
  • 1½ Tbs cornstarch
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • pinch of salt
  • 1½ cup sour cream
  • 3 eggs, separated
  • 1½ cups raisins
  • 1½ Tbs lemon juice
  • ¼ tsp cream of tarter
  • ½ teaspoon vanilla
  • Baked 9” pie shell

Instructions

  1. Combine 1 cup sugar, cornstarch, cinnamon, nutmeg and salt in 3 quart saucepan.  Stir in sour cream. 
  2. Preheat oven to 400° F.
  3. Beat egg yolks lightly.  Stir beaten yolks, raisins and lemon juice into saucepan with the sour cream mixture.  Cook over medium heat, stirring frequently, until boiling.  Cook 1 minute more.  Remove from heat and let cool while preparing meringue.
  4. Beat egg whites and cream of tartar until foamy.  Gradually add 6 tablespoons of sugar one tablespoon at a time, beating well after each addition.  Continue beating until stiff, glossy peaks form.  Beat in vanilla.
  5. Pour slightly cooled raisin mixture into shell.  Cover with meringue.
  6. Bake in middle of oven for 10 minutes.
