Sour Cream Raisin Pie
Ingredients
- 1 cup sugar + 6 Tbs sugar
- 1½ Tbs cornstarch
- ½ tsp cinnamon
- ¼ tsp nutmeg
- pinch of salt
- 1½ cup sour cream
- 3 eggs, separated
- 1½ cups raisins
- 1½ Tbs lemon juice
- ¼ tsp cream of tarter
- ½ teaspoon vanilla
- Baked 9” pie shell
Instructions
- Combine 1 cup sugar, cornstarch, cinnamon, nutmeg and salt in 3 quart saucepan. Stir in sour cream.
- Preheat oven to 400° F.
- Beat egg yolks lightly. Stir beaten yolks, raisins and lemon juice into saucepan with the sour cream mixture. Cook over medium heat, stirring frequently, until boiling. Cook 1 minute more. Remove from heat and let cool while preparing meringue.
- Beat egg whites and cream of tartar until foamy. Gradually add 6 tablespoons of sugar one tablespoon at a time, beating well after each addition. Continue beating until stiff, glossy peaks form. Beat in vanilla.
- Pour slightly cooled raisin mixture into shell. Cover with meringue.
- Bake in middle of oven for 10 minutes.
