Tina’s Swordfish Kabobs

Excellent marinade recipe from our neighbor – Terry

Ingredients

  • 2 tablespoons chopped fresh rosemary
  • 3 tablespoons low sodium soy
  • 1½ tablespoons olive oil
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 teaspoon orange zest
  • 1 tablespoon fresh orange juice
  • 1 teaspoon fresh ginger, grated
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 5 garlic cloves, chopped
  • 1½ lb. swordfish

Instructions

  1. Put all the ingredients in a zip-top bag with swordfish pieces and refrigerate for 30 minutes.

Note

  • I add onion and pepper pieces to swordfish kababs before grilling.
