Tortilla Soup

A quick and delicious family favorite.

Ingredients

  • 2 (14 1/2 oz) cans chicken broth
  • 1 (14 1/2 oz) can stewed tomatoes
  • 1 tablespoon fresh lemon juice
  • 3 garlic cloves, pressed or finely minced
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 1/2 cups cooked chicken, chopped
  • 1 cup frozen corn kernels
  • 1 (15 oz.) can black beans, drained and rinsed
  • 2 tablespoons half-and-half
  • 1 green onion, thinly sliced
  • 1 cup (4 oz.) shredded Mexican four-cheese blend
  • tortilla chips

Instructions

  1. In a large stock pot, bring first 7 ingredients to a boil.
  2. Reduce heat, add chicken and next 4 ingredients, and simmer 20 minutes.
  3. Ladle into your favorite bowl and garnish with cheese and green onions. Serve with tortilla chips.
