Twenty Garlic Chicken

Ingredients

  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon pepper
  • 1 teaspoon olive oil
  • 6 bone-in and skin-on chicken thighs
  • 1 large onion, sliced
  • 2 medium carrots, sliced into ½” rounds
  • 20 cloves garlic, peeled

Instructions

  1. In a small bowl mix salt, paprika, pepper and oil to form a paste; spread evenly over each piece of chicken.
  2. In a 5-6 quart slow-cooker, place onion slices and carrot rounds. arrange chicken thighs over vegetables.  Place garlic cloves around the chicken.
  3. Cover and cook on Low for 5-6 hours.
  4. With a slotted spoon, remove chicken, onion, carrots and garlic from slow-cooker and place on a serving platter.  Can use the garlic in mashed potatoes, bread or with the vegetables.
