In
a small bowl mix salt, paprika, pepper and oil to form a paste; spread evenly
over each piece of chicken.
In
a 5-6 quart slow-cooker, place onion slices and carrot rounds. arrange chicken
thighs over vegetables. Place garlic
cloves around the chicken.
Cover
and cook on Low for 5-6 hours.
With
a slotted spoon, remove chicken, onion, carrots and garlic from slow-cooker and
place on a serving platter. Can use the
garlic in mashed potatoes, bread or with the vegetables.
