Wicked Blueberry Coffee Cake

This “wicked good” recipe is from my friend, Sheri.

Ingredients

  • ½ cup butter, room temperature
  • 1 cup sugar
  • 3 eggs, slightly beaten
  • ½ tsp. vanilla
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 2 cups flour
  • 1 cup sour cream
  • 2 cups blueberries (fresh or frozen)
  • 1 cup brown sugar
  • ¼ cup butter, room temperature
  • ¼ cup flour

Instructions

  1. Preheat oven to 350° F.
  2. Cream ½ cup of butter and sugar until light and fluffy.
  3. Add next five ingredients (through salt) and mix well.
  4. Add the 2 cups of flour and sour cream alternately to egg mixture, mixing with a spoon. Fold in blueberries.
  5. Pour mixture into a greased 9″x13″ baking pan.
  6. In a separate bowl, cream brown sugar and remaining butter. Add flour to get a semi-dry mixture. Spread on top of batter.
  7. Bake for 30 minutes or until a toothpick comes out clean.
