Apple Harvest Cake

This recipe was a winner in the Pillsbury Bake-off Contest. Very yummy and moist! An Orono quilter, Leslie Astbury, brought it to the quilter’s retreat held at Hancock in November 2008.

INGREDIENTS

  • 1¼ cups white flour
  • 1 cup whole wheat flour
  • 1 cup sugar
  • ¾ cup packed brown sugar
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ½ teaspoon soda
  • ¾ cup cooking oil
  • 1 tsp vanilla
  • 3 eggs
  • 2 cups finely chopped apples
  • 1 cup chopped nuts

INSTRUCTIONS

Beat all ingredients except apples and nuts together for 3 minutes at medium speed after blending together.

Stir in by hand the apples and chopped nuts.

Pour into greased and floured tube or Bundt pan.  Bake at 325°F for 50 to 60 minutes.  Cool 15 minutes in pan.  Turn out.  Cool. 

Glaze:  ½ cup powdered sugar, ¼ teaspoon vanilla, 2 to 3 teaspoons milk
