Banana Drop Cookies
A neighbor who had a baby the same age as Terry gave me this recipe one day when I had several overly ripe bananas on hand. We later rented the same house on Park Lane when the Farrars vacated it.

INGREDIENTS
- 2¼ cups sifted flour
- 2 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ½ cup shortening
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup mashed ripe bananas
INSTRUCTIONS
Sift together flour, baking powder, soda and salt. In a large bowl, beat shortening until creamy. Add sugar gradually, beating until light and fluffy. Add eggs, one at a time, beating after each addition until fluffy. Stir in vanilla.
Add flour mixture alternately with bananas, beating after each addition until smooth. Drop by teaspoonsful onto ungreased cookie sheets about 1½ inches apart. Makes about 2½ to 3 dozen medium-sized cookies.
Bake in a moderately hot oven (400°) about 9-12 minutes. Remove from pans at once.
