Beef and Broccoli

Grammy and I took a Chinese Cooking Class together in 1988 and this is one of the dishes that we fell in love with and still make.

INGREDIENTS

  • 1 medium head of broccoli
  • 1 lb flank steak or sirloin tip cut into thin slices across the grain
  • 3 tablespoon oil to stir-fry broccoli; 1½ tablespoon oil for meat
  • ½ teaspoon garlic salt
  • 4 slices ginger root
  • 2 tablespoons sherry
  • 3 tablespoons water
  • ½ teaspoon sugar
  • 2 teaspoon oyster sauce

MARINADE:

  • 2 tablespoon soy sauce
  • 1 tablespoon sherry
  • 1 tablespoon cornstarch
  • 1 tablespoon oil
  • 1 tablespoon water

INSTRUCTIONS

Marinate beef about 20 minutes.  Clean and trim broccoli.  Slice stems diagonally into thin slices.  Heat 3 tablespoons oil in skillet or wok.  Stir-fry broccoli about 1 minute.  Add sugar, garlic salt and sherry and continue frying for another minute.  Add water, cover and turn down heat and steam for about a minute.  Turn broccoli onto serving platter. 

Reheat pan and add about 1½ tablespoon oil.  Fry ginger about 30 seconds.  Add beef and oyster sauce.  Stir-fry to desired doneness.  Serve beef over broccoli.
