Braised Pork with Carrots
Excellent recipe!! This is another recipe that Grammy and I got when we took the Chinese Cooking course together. It is very easy to make and is delicious.

INGREDIENTS
- 1 clove garlic, minced
- 1 tablespoon pale dry sherry
- ⅓ cup soy sauce
- 1 lb pork tenderloin, cut into strips
- 1 tablespoon cornstarch
- 2 tablespoon oil
- 2 onions, each cut into 6 sections
- 1 tablespoon sugar
- 4 carrots, cut into 3” julienned strips
- chopped parsley to garnish
INSTRUCTIONS
Mix together the garlic, sherry, and 2 tablespoons of the soy sauce. Add the pork strips and toss to coat well. Leave to marinate for at least 20 minutes, then stir in the cornstarch.
Heat the oil in the pan. Throw in the onions and stir-fry for about 45 seconds, then add the meat mixture and stir-fry until the meat is browned.
Add the remaining soy sauce, the sugar, and just enough water to cover the meat. Bring to a boil. Add the carrots and simmer for about 40 minutes or until the meat is tender. Serve hot, garnished with chopped parsley.
