Butterflied Roasted Chicken

INGREDIENTS
- Whole roaster chicken, 4+ lbs, butterflied
- olive oil
- fresh rosemary and sage
- garlic
- coarse salt
- freshly ground white pepper
INSTRUCTIONS
Roast on the bottom shelf of a preheated 475° oven for 30 minutes. Turn down oven temperature to 400 degrees and continue roasting until juices run clear when poked with a knife in the thigh or drumstick.
Total time in oven runs approximately 12 minutes per pound.
