Chicken with Sesame Noodles

I got this recipe from Terry after she served it for dinner during a visit.  I nearly inhaled the entire bowl of noodles and begged for the recipe (although I didn’t have to beg very hard).

INGREDIENTS

  • 8 oz linguine or spaghetti

  • 1 red pepper, medium size
  • 1 cucumber, medium size
  • 1 green onion

  • 2 large skinless, boneless chicken breast halves (1 pound)
  • 2 tablespoons cornstarch
  • ½ teaspoon salt
  • 2 tablespoons vegetable oil

  • ¼ cup creamy or chunky peanut butter
  • 3 tablespoons soy sauce
  • 1 tablespoon Oriental sesame oil
  • 1 tablespoon white vinegar
  • 2 teaspoon sugar
  • ¾ cup water

INSTRUCTIONS

About 40 minutes before serving

Prepare linguine as label directs: drain.

Meanwhile, cut pepper and cucumber into matchstick thin strips; slice green onion.  Set aside

Cut chicken into 1” strips.  Combine cornstarch and salt.  Toss chicken strips in mixture to coat.  In 12” pan over medium-high heat cook chicken in oil.  Remove chicken to plate and keep warm.  Note: marinate chicken in additional soy sauce mixture for added flavor.

In pan, add peanut butter, soy sauce, sesame oil, vinegar, sugar and ¾ cup water.  Cook until smooth. Stir in linguine and heat.

Put linguine on platter.  Top with chicken, pepper, cucumbers and onions and toss to serve.  Note: If you want the leftovers to taste better, do not put pepper, cucumbers and onions on the top – serve them on the side so that they won’t wilt.
