Cornbread (Johnny Cake)
Excellent! Sweet and holds together. I tried six different recipes. This was the one I kept for cornbread.

INGREDIENTS
- ½ cup corn meal
- 1 cup all-purpose flour
- ¼ cup sugar
- 3 teaspoons baking powder
- 2 tablespoons oil
- ½ teaspoon salt
- 1 egg, beaten
INSTRUCTIONS
Stir together corn meal, flour, sugar, baking powder, and salt. Make a well in the dry ingredients and add milk, oil and egg all mixed together. Mix well.
Pour into an 8-inch square or, for crisper bread, a 9-inch square pan which has been greased. Bake at 450° for about 20 minutes or until brown.
