Crostini with Onion Jam
I recently took a cooking class and this was one of the recipes that we prepared. Unbelievably good!

INGREDIENTS
- 4 large onions, sliced or chopped
- 2 tablespoons olive oil
- Salt
- Ground pepper
- 1 tablespoon sugar
- 3-4 sprigs fresh thyme or ½ tsp dried
- ½ cup red or white wine or ¼ cup of vinegar
- 1 Baguette
INSTRUCTIONS
Peel and dice or slice the onions. Head a medium-sized sauté pan and pour in the olive oil. Add the onions and cook over a medium heat until the onions begin to wilt. Season with salt and pepper and cook another 10 minutes. Sprinkle the sugar over the onions and continue cooking until they begin to brown. Add wine or vinegar and Thyme, cover the pan and cook for 30 minutes on very low heat.
Remove the cover and continue cooking on low heat until the liquid has almost disappeared. Taste and season with salt and pepper. Add more sugar or vinegar if needed.
Preheat oven to 400°. Slice a baguette on the diagonal into ⅛ inch slices. Place in a single layer on a baking sheet. Bake for 10 minutes.
