Impossible Quiche

A long-time Soule family recipe from Jeanne Soule. This quiche makes its own crust. Leave out the ham/bacon to make it vegetarian.


INGREDIENTS

  • 3 eggs
  • ½ cup biscuit mix
  • ½ cup melted butter
  • 1½ cup milk
  • ¼ tsp salt
  • ⅛ tsp pepper

  • 1 cup shredded swiss or sharp cheddar cheese
  • 1/2 cup cooked and chopped ham or bacon
  • green pepper, mushrooms, onion, sautéed

INSTRUCTIONS

Blend together eggs, biscuit mix, butter, milk, salt and pepper. Pour into greased 9-inch pie pan. Sprinkle cheese, meat and other goodies over top and press below surface with the back of a spoon. Bake at 350°F for 45 minutes or until done.
