Lemon Bread Cake

One of our neighbors on Mainwood Avenue in Orono,  June Kittridge, shared her recipe after I had tasted it on a morning coffee break at her home.

INGREDIENTS

  • 6 scant tablespoons shortening
  • 1 cup sugar
  • 2 eggs
  • 1½ cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • rind of 1 lemon, grated

icing:
  • ⅓ cup sugar
  • juice of 1 lemon

INSTRUCTIONS

Beat together shortening, sugar and eggs until smooth.  Combine dry ingredients and add to sugar mixture alternately with ½ cup milk.  Add grated rind of 1 lemon.  Stir in well.  Pour into a greased loaf pan.  Bake at 350° F for 55-60 minutes.

Remove from oven and immediately pour over top of cake: ⅓ cup sugar mixed with juice of 1 lemon.  Let set until mixture has soaked into bread.
