Mamie's Million Dollar Fudge

Recipe came out during President Eisenhower’s days in Washington D.C.   I loved this no-fail recipe because my fudge making experiments didn’t always turn out as planned.  When I was ten years old, I took care of two younger brothers during the summer when Mum and Dad earned their livelihood by clamming.  Late one afternoon I cut into the pan of very hard fudge when the knife slipped. I had been cutting towards me and the point of the knife went into my wrist.    Panic stricken, I grab my wrist, ran out the door, yelling to my grandmother (Nanny) who had just visited us and was on her way home just up the hill.  She came running back to administer first-aid.  Luckily, everything turned out okay.  I had thankfully missed the artery in my wrist.

INGREDIENTS

Group 1
  • 2 cups (12 oz) semi-sweet chocolate chips
  • 3 packages (4 oz. each) sweet cooking chocolate (may substitute ¼ cup cocoa instead)
  • 1 jar (8 oz) marshmallow cream (1 cup)
  • 2 cups broken walnuts

Group 2
  • 4½ cups sugar
  • Pinch of salt
  • 2 tablespoons butter
  • 1 regular can evaporated milk

INSTRUCTIONS

Combine Group 1 ingredients in a large bowl.

Combine Group 2 ingredients in a heavy saucepan.  Heat to boiling, stirring constantly.  Boil 6 minutes, stirring often.

Pour at once over chocolate mixture in bowl.  Stir vigorously with wooden spoon until chocolate is creamy and melted.

Pour into shallow, butter pan 13 x 9 x 2-inch.  Let stand a few hours to set.  Cut into squares.  Store in tightly covered container.

Yield: 5 lbs.
