Oatmeal Carmelitas

This is a recipe that I got when I was a Girl Scout in 5th or 6th grade from a girl in my troop whom I couldn’t stand.  I loved the treats she brought in and I desperately wanted the recipe. I hated to ask her for it but am so glad I did since it’s still a favorite of mine.

INGREDIENTS

Crumb Mixture
  • 1 cup flour
  • 1 cup rolled oats
  • ¾ cup brown sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup butter, melted

Topping
  • 1 cup chocolate chips
  • ¾ cup caramel ice cream topping
  • 3 tablespoon flour
  • ½ cup chopped nuts


INSTRUCTIONS

Combine crumb mixture ingredients.  Put half of crumb mixture in a 9-inch square pan.  Save the rest for the top.  Bake the crust at 350° F for 10 minutes. 

Combine the topping mixture in a bowl and then pour over crust.  Sprinkle remaining crumbs over caramel topping.  Bake at 350° F for 15 to 20 minutes or until golden brown.  Chill bars for easy cutting.
