Pizza Dough
My go-to pizza dough recipe from Cooks Illustrated. Makes 4 medium sized pizzas or 2-3 larger ones. Since this recipe contains no oil, it's important to spray pizza pans with cooking spray before baking, otherwise it's practically impossible to remove pizza from the pan.

INGREDIENTS
- 1¼ tsp. instant yeast
- 1 cup water
- 1¾ cups unbleached all-purpose flour
- 1 cup cake flour
- 1½ tsp. table salt
- 2 tsp. sugar
INSTRUCTIONS
Dissolve yeast in warm water for about 5 minutes.
Add flour, salt and sugar and mix until dough is smooth, adding more flour if necessary. Turn out onto counter and kneed for about 5-10 minutes until dough is smooth and elastic.
Let rise for an hour or two, punch down, and form into pizza shapes. If using metal pizza pans, spray with cooking spray before forming dough in pans.
